Helliemae’s Salt Caramels are different. Pushed to the very brink of what sugar + heat can do, these big, deeply-flavored beauties are much more intense than other salted caramels. Dark and rich, they’re made in tiny, four-pound batches with more butter and cream than most: they taste incredibly fresh, not sticky.

There are three main varieties: Classic Salt, Coffee, and Cardamom. They all have Helliemae’s signature intensity, with an addictive salty/sweet combination. Each season, there are limited-edition flavors. This Spring meant Jasmine: lighter caramels infused with the delicate perfume of jasmine tea. Last Fall,  Ellen made apple caramels that are Autumn in a square: they’re like caramel-covered apples, but without the mess. Keep your tongue crossed Ellen will bring these for some Firefly flavor!
